2 cups water
1 cup mango juice
1/2 tsp butter
1/4 tsp salt
2 cups pearl couscous
2 tsp sesame oil
3/4 cup Culinary Tours® Peanut Sauce
1 mango, sliced and grilled
2 green onions, sliced
1/2 cup frozen peas, thawed
1/4 cup cashew pieces
2 Tbs shredded coconut
1 Tbs cilantro, finely chopped
Directions
  1. In a saucepan, combine the water and 1 cup mango juice. Bring to a boil. Add butter and salt. Add couscous. Reduce to a simmer. Cover. Let simmer for 6 to 8 minutes until couscous is tender. Transfer couscous to a large bowl. Stir in the sesame oil.
  2. Pour the peanut sauce over the couscous. Add mango, onions and peas. Stir to combine. Refrigerate for 1 hour. Add cashews, coconut and cilantro before serving.
